Forested Pork Summer Sausage
Finally, humanely raised and nutrient dense summer sausage for charcuterie. This product does not have to be refrigerated until it's been opened. These are made without chemical nitrates, and made with celery juice extract.
Our heritage forested pigs are raised in a regenerative manner and are rotationally grazed in our deciduous and evergreen forest. They are fed a non-GMO supplemental feed, given absolutely no hormones, chemicals, or antibiotics, and live like pigs should live! They are rotated every 4-6 days in electric poly wire and t-posts, allowing them to be able to forage for wild leeks, wild ginger, acorns, nuts, seeds, berries, mosses, insects, invasive weeds, branches, leaves, and whatever else they can root up. They also get eggs from our working layers. You will taste the difference, as we get rave review from customers.
Our pork will come to you as fresh-frozen, and wrapped in butcher paper. Be sure to save your pork fat after cooking, to use for future dishes. Animal fat is the best kind of fat!
